Update 11/20/2022: It turns out that Sprigatito, Fuecoco and Quaxly are Shiny locked as starter Pokémon in Pokémon Scarlet and Violet, which means you can’t get their Shiny versions at the beginning of the game. You will, however, be able to get the sought-after variants via breeding later on in your adventure.
